You can turn your store "off" temporarily and stop taking orders. To do this, log into your store admin panel, navigate to Administration/Catalog Set Up and find "Order Button" with the drop down menu next to it. Choose "never display" from the drop down menu. This will turn off your order button so no one will be able to add any items to their cart. You may also want to include a note on your site somewhere that you will be closed for a period of time.
